Spinach, bacon and feta quiche

Quiche is a versatile baked dish that can be used as a family dinner or for snacks at a social event. Serve it cold or hot. And impress your audience at the same time.

Making a quiche may seem daunting at first, but you’ll find it’s actually quite straight forward. You can do it in just four steps.

The main ingredient in this quiche recipe is spinach. So find your local green grocer or fresh food market and buy a bushel or two of this wonderful dark green leafy vegetable. You will see that the recipe says “1 bushel of spinach.” So how much spinach is a bushel? This is something that will vary according to where your are. The most important thing is that you have enough spinach to make your quiche filling.

Remember, after steaming, the spinach will reduce in size by more than half.

Spinach, bacon and feta quiche

Equipment

  • 1 Pot (Or a steamer)
  • 1 Pan
  • 1 Mixing bowl
  • 1 Pie pan or oven dish (A disposable pie pan works well)

Ingredients
  

  • 1 Bushel Spinach (Spinach shrinks a lot when cooked)
  • 100 g Bacon
  • 1 Medium onion
  • 100 g Crumbled feta cheese (About 1 Cup full)
  • 3 Large eggs
  • 1 Cup Cream (250 ml)
  • 1 Sheet Puff pastry (Pre-made is the easiest)
  • 1 tsp Salt
  • 1 tsp Ground black pepper
  • 1 tsp Nutmeg
  • 1 tbsp Olive oil (Or other cooking oil)

Instructions
 

Steam the spinach

  • Cut the stalks off the Spinach
  • Cut the spinach into pieces
  • Steam the spinach for 5 mins until bright green (Use a steamer, or 1 Cup of water in a pot on medium heat)
  • Press the water from the steamed spinach
  • Move the spinach to a holding bowl

Fry the bacon and onions

  • Chop the onions into fine pieces
  • Cut the bacon into small bits
  • Fry the bacon and onions in a pan in 1 tbsp cooking oil until the onions smell great.

Egg mixture

  • In a mixing bowl, beat the 3 eggs together
  • Add the cream, salt, pepper, nutmeg and cayenne pepper. Mix well.

Prepare the pie pan

  • Roll the puff pastry out with a rolling pin until is big enough to line the pie pan or oven dish
  • Line your pie pan or oven dish with puff pastry and press the pastry firmly against the sides of the pan
  • Add the drained spinach onto the pastry – spread it out evenly
  • Add the bacon and onions over the spinach
  • Crumble the feta cheese into the pan
  • Pour the egg and cream mixture into pie pan to fill the spaces
  • Bake for 45 mins at 200° Celsius (400° Fahrenheit)
