Be a hero and make this mouth watering savoury mince toasted sandwich for your peeps. It’s so much more than “just a toasted sandwich”. And it provides a good portion of protein, and even some vegetable with the carbs from the bread.
A toasted sandwich is a fast and easy way to make dinner without making all the dishes dirty. And a savoury mince filling is hearty and delicious and is sure to leave everyone wiping the smiles on their faces.
All you need is bread, your filling of choice, and a pan. You don’t even need a sandwich toaster. (Just think of Jon Favreau making that mouth watering toasted cheese sandwich in a pan in Chef.
The main part of this recipe is the Savoury mince filling. You will be surprised at how versatile this mince recipe is. You can use it with rice, with mashed potato or even with pasta. The other cool thing about this savoury mince filling as that you can freeze if for later use. Freeze small portions in tiny zip seal bags for sandwiches. Or freeze bigger portions in freeze safe containers to serve with rice or potatoes.
How to defrost the mince filling
When you know that you want to use your savoury mince filling for a meal, take the portion you need out of the freezer. You can leave the mince to defrost at room temperature in it’s container for a few hours. This is especially handy when you are working from home and you know what you want to make for dinner. Alternatively you can use the microwave to defrost the portion you need. Make sure your freezing container is microwave safe!

Savoury mince toasted sandwich
Equipment
- Pot (The more filling you want to make the bigger your pot must be)
- Pan (Or a sandwich toaster)
- Cutting board (For chopping)
- 1 Sharp knife (For chopping)
- 1 Big spoon For mixing
Ingredients
Savoury mince filling
- 250 g Ground beef (Been mince)
- 1 1 Medium onion
- 3 Cloves 3 Cloves of garlic Crushed
- 2 2 Medium potatoes Peeled, Cut into cubes
- 2 2 Medium carrots Diced
- 1 Cup Green peas
- 1 Cup Sweet corn
- 1 tsp Meat spice / Spice for mince
- 1 tsp Salt
- 1 tsp Ground black pepper
- 1 tbsp Medium curry powder / Garam masala
- 1/4 Cup Tomato paste
- 1/3 Cup Fruit chutney
- 1 tsp Canola oil/ Sunflower oil/ Olive oil
- 1 Beef stock cube Dissolved in 500ml of water
Sandwich
- 8 Slices 8 Slices of bread
- 1/3 Cup Butter Or Spray 'n Cook
Instructions
Preparation
- Dice the onion
- Crush the garlic
- Grate the carrots
- Peel the potatoes and chop into small cubes
- Dissolve the beef stock cube in 500ml of boiling water
Cook the pot ingredients
- Add 1 tablespoon of cooking oil to your pot
- Fry the diced onions until they smell delicious – while the onions are frying add a tablespoon of curry powder and mix it in (best aroma in the world)
- Add the crushed garlic to the pan (Don’t add this to the hot pan at the start, because the garlic will burn).
- Now add the mince (ground beef) to the pan and cook until light brown
- While the mince is cooking add salt, pepper and meat spice (make sure the spices cover all the mince).
- Add the chutney and tomato paste to the mince and mix it in
- Add the grated carrots, peas and sweetcorn to the pot – mix it in
- Finally add the 500ml beef stock and stir
Simmer
- Let the pot simmer on medium heat for 40 mins. Check ever so often to check that there is enough liquid. After 30 minutes the liquid should start turn into a nice gravy
The sandwich
- If you are using a sandwich toaster, butter both sides of the bread, or spray the toaster with spray ‘n cook
- If you are using a pan add 1 tablespoon of butter to the pan on medium heat
- Scoop some of the mince filling onto 4 out of the 8 slices of bread.
- Cover the slices with slices that don't have filling
- If you are using a sandwich maker, make sure it is hot before adding the sandwich
- If you are using a pan – Bring the pan to medium heat and melt 1 tsp of butter
- Press the sandwich down with a spatula while it toasts in the pan
- After 5 minutes, flip the sandwich over so that the other side can toast
- After 8 – 10 mins you should have a deliciously toasted sandwich
