
Savoury mince and rice
A delicious pot of mince that can be served with rice, on bread, or as a filling for deep fried dough balls (Vetkoek). The level of spice is up to you. For a stronger curry add more curry powder or garam masala.
Equipment
- 1 Large pot
- 1 Cutting board
- 1 Large spoon
Ingredients
- 500 g Beef mince (Ground beef)
- 1 Medium onion
- 2 Medium potatoes
- 2 Medium carrots
- 1 Cup Green peas
- 1 Cup Sweet corn
- 3 Cloves Garlic (Crushed)
- ¼ Cup Tomato paste
- ⅓ Cup Fruit chutney
- 1 tbsp Meat spice / Spice for mince
- 1 tsp Salt
- 1 tsp Ground black pepper
- 1 tbsp Medium curry power (Garam masala)
- 1 Beef stock cube (Dissolved in 500 ml of water)
- 1 tbsp Cooking oil
- 1 Cup White rice
- 1 tsp Turmeric
Instructions
Preparation
- Dice the onion
- Crush the garlic
- Grate the carrots
- Peel the potatoes and cut into small cubes
- Dissolve the beef stock cube in 500 ml of boiling water
Cook the pot ingredients
- Add 1 tablespoon of cooking oil to your pot and bring to a medium heat
- Fry the diced onions until they smell delicious – while they are frying add a tablespoon of curry powder and mix it in (best aroma in the world)
- Add the crushed garlic (Don’t add this to the hot pot at the start, because the it will burn).
- Now add the mince (ground beef) to the pot and cook until light brown
- While the mince is cooking add salt, pepper and meat spice (make sure the spices cover all the mince).
- Add the chutney and tomato paste to the mince and mix it in well
- Add the grated carrots, peas and sweetcorn to the pot – mix it in with a large spoon
- Finally add the 500 ml beef stock and stir
Simmer
- Let the pot simmer on medium heat for 40 minutes
- Check ever so often to check that there is enough liquid. After 30 minutes the liquid should turn into a nice gravy
Cook the rice
- Cook 1 cup of rice in steamer or in boiling water in a pot on the stove (Remember to add pinch of salt to the water)
- Add 1 tsp of turmeric to the water to get traditional South African yellow rice
Serve
- Serve on plates with a scoop of rice covered in mince
